Vraisemblablement un surnom formé sur l'ancien adjectif "saur", qui signifie "châtain" (vient du latin tardif "saurus", avec le même sens). Le nom est surtout porté dans l'Aude, et il a dû être employé comme nom de personne (les formes Saurus et Saurina sont attestées dans divers cartulaires). On trouve l'équivalent Saurin en Provence.
